sweelin® is inspired by a sweet protein found in the serendipity berry and by other proteins that thrive in the harshest conditions, like hot springs, the Dead Sea, acidic swamps, deep ocean hot vents and the Arctic.

Cutting-edge technology, ancient fermentation methods

Think of a protein as a set of pearls on a string. The arrangement of pearls gives a protein its properties.

At Amai, we discovered how to best arrange these pearls, making a hyper-sweet protein. Just like in a brewery we use yeast, but instead of beer, we brew hyper-sweet protein. We teach the yeast how to make this new string of pearls, and we orchestrate the magic of the fermentation process.

The way we make sweelin® matters.

By combining the ancient technique of fermentation with today’s technology we are able to make a white powder that can replace up to 70% of sugar in our foods.
